Right after roasting:

In fact, coffee that’s too fresh can taste:

That’s why even roasters don’t recommend brewing immediately.

☕ Best flavor window: ~3 to 10 days after roasting

☕ Peak range overall: ~4 to 14 days post-roast

Grinding actually speeds up oxidation (aka staling), meaning your coffee loses flavor fast.

Keep beans whole while they rest

Grind right before brewing
